Out of this world Quesadillas

Who loves quesadillas? I know I do! 😀 Ha, last night was my first time to make them, and I think I did an excellent job for my first time lol.

These are easy, no-fuss quesadillas that are slightly crispy, completely cheesy and amazingly delicious! These Cheesy Ground Beef Quesadillas would make the perfect meal for busy weeknights!

Cheesy ground beef quesadillas

INGREDIENTS

1 Tbsp. Butter
⅓ cup chopped onion
1 tsp. salt
1 lb. extra lean ground beef
One can (8 oz) tomato sauce with basil, garlic, and oregano
1/8-1/2 tsp. red pepper flakes, if desired
Eight 10-inch flour tortillas
4 C shredded cheese

INSTRUCTIONS

1. In a big skillet, melt the butter. Combine diced onion and cook until the onion starts to turn transparent and edges become golden brown. Combine the ground beef and a pinch of salt and cook until meat is no longer pink. Drain any grease. Combine the tomato sauce and the red pepper flakes and simmer for ten minutes. In another large skillet melt some butter (approximately one tablespoon to start) over medium heat and place a tortilla in the skillet.

2. Sprinkle approximately ½ cup of the shredded cheese and then top it with some of the meat (approximately ¾ cup). Top with another tortilla and coat butter all over the top of the tortilla. Cook until golden brown and then turn over and cook on the other side for about three-four minutes or until golden brown. Return with remaining tortillas, adding more butter to the pan as required. Remove from pan and slice into triangles. Garnish with sour cream, fresh cilantro, and guacamole, if desired. Serve with refried beans as a side dish.

NOTES

If you don’t own tomato sauce with basil, oregano, and garlic and you just don’t feel like making a dash to the store, then just use a can or regular tomato sauce and combine approximately a ½ tsp. of basil, ½ tsp. of oregano and a clove of garlic, minced.

A twist on Meatloaf

Do you love Philly cheesesteak sandwiches? And or are you a fan of meatloaf? I admit I don’t like it that much, but I love and love Philly cheesesteak sandwiches. Yum yum! Even though they are totally unhealthy lol. 😀

However, I had this intense urge to cook tonight, and I chose to try a different twist on meatloaf (as I am trying my very best to expand my horizons on food lol), my inspiration was the Philly cheesesteak sandwich. This Philly Cheese Meatloaf recipe was excellent and super easy to prepare. And not to mention a huge favorite! 🙂

Philly Cheese Meatloaf

Ingredients

1 medium onion, chopped
1 green or red bell pepper, chopped
1 Tbsp. Olive oil
1-2 lb. ground turkey or beef
1/2 C. bread crumbs
1 egg
1/4 tsp. salt
1/4 tsp. pepper or more to taste
1/2 tsp. garlic powder
3 Tbsp Worcestershire sauce
Six slices provolone or Colby Jack cheese

Instructions

Preheat the oven to 350°F.

1. Line a baking sheet with foil and grease it with cooking spray. Set aside. Pour oil into a large skillet, add the onion and pepper and sauté them in the oil until soft. Mix these veggies with the remaining ingredients except for the cheese in a large bowl.

2. Place half of this mixture into previously prepared baking dish and top with three of the slices of cheese. Repeat so you have two meat-cheese layers. Bake for forty-five minutes (the internal temperature of the meat should reach 165°F). Allow the meatloaf to sit for five minutes before slicing and to serve.

Pizza with a twist

Bacon cheeseburgers and pizza are mouthwatering. But my preference is pizza. It’s one of my all-time favorite pleasurable foods to eat while drinking a glass of root beer. I especially enjoy it when I’m watching one of my favorite movies the Lord of the Rings trilogy. Moreover, I also like to try new, different things on it as well. Although, some of the toppings I prefer to have on my pizza are bacon and lots of cheese.

Today I’m sharing with you a pizza that has all three wrapped into one.
But first, I want to let you know that this was my first ever most challenging recipe to cook and yes, of course, I did get a little frustrated and impatient because there were some challenges along the way.
However, I was very determined not to give up and because of my determination the outcome of the pizza was very fattening. Haha! 😀
I was so happy with myself for having the will to continue working at it.

If you do not get the results that you wanted, please don’t get discouraged cause presentation doesn’t matter. But, what is important is that you are trying, and I’m proud of you. 🙂 🙂

Bacon Cheeseburger Pizza Pinwheels

Ingredients

One can Pillsbury Seamless Dough Sheet
1 C. shredded cheddar cheese
1 C. shredded mozzarella cheese
½ lb lean ground beef
Eight slices bacon
3 Tbsp pizza sauce

Instructions

Preheat oven to 375°F.

1. Pour a few drops of olive oil into a medium saucepan and place beef into the pan. Cook the meat on medium/high heat. Once fully cooked drain the fat. Set meat aside. Next, in a large skillet, cook bacon over medium/high heat and crumble bacon. Set aside.

2. Remove crescent rolls from can and lay out in a long rectangle.
Sprinkle cheddar and mozzarella cheeses on top of crescent rolls.
Sprinkle ground beef and bacon. Drizzle with pizza sauce.

3. Roll up like a cinnamon roll and cut into 8 rolls.
Place in a lightly greased pie pan or 9-in square baking dish and bake for 18-20 minutes or until golden brown.

A Messy Favorite

Today I am sharing with you on how to make one of my most-liked American foods and that is sloppy joes. I like this version of the dish because it’s full of flavor and delicious. I am very well aware that some of you are not quite yet comfortable using the stove or being around heat but trust me YOU will get there someday. 🙂

Here’s the recipe:

Homemade Sloppy Joes

Ingredients

Two cloves garlic, minced

1lb ground beef (or turkey)

2 Tbsp of olive oil

8oz tomato sauce

1/2 cup ketchup
1/4 cup brown sugar
2 Tbsp of Worcestershire sauce
1 tsp of mustard
1/2 tsp garlic powder
1/4 tsp onion powder
Freshly ground black pepper, to taste
Hamburger buns
Sliced pickles

Directions

Set a large saucepan over low heat. Add two tablespoons of olive oil, and saute the garlic for a minute or two until just fragrant and very light golden brown. Add ground beef, increase heat to medium/medium-high, and cook until no longer pink, breaking apart and stirring as meat cooks. Drain grease from meat.
While meat is cooking, make the sauce. In a medium dish, stir the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, garlic powder, onion powder, and freshly ground black pepper, to taste, until well combined. Pour over cooked meat, stir, and cook gently for a few minutes until warm. Serve on hamburger buns or rolls with sliced pickles on top.

For the Lord your God is with you wherever you go.” Joshua 1:9 NLT I love this verse because it reassures me that God is constantly watching over me regardless of what I’m doing.
