Veggie Bacon Cheddar Chicken Dinner

If you dig chicken and broccoli recipes, you’ll love this super easy Broccoli Bacon Cheddar Chicken recipe. All you do is toss the chicken breasts in a casserole dish, then top with the rest of the ingredients and bake for thirty minutes!

Broccoli Bacon Cheddar Chicken

Ingredients

cooking spray

2-4 chicken breasts

salt and pepper

2 cups broccoli florets, chopped

Six strips bacon, cooked, chopped

1/3 cup Mozzarella cheese, shredded

1 cup Cheddar cheese, shredded

Instructions

Preheat the oven to 400 F. Grease the bottom of a 9×13 baking dish with cooking spray. Set aside.

1. Add the chicken breasts to the casserole dish. Sprinkle chicken breasts with salt and pepper. Pour the broccoli florets all over the chicken. Top with chopped cooked bacon. Sprinkle with shredded Mozzarella and cheddar cheese.

2. Bake, uncovered, for about twenty-thirty minutes, until the chicken is cooked through. The cooking time will depend on the thickness of your chicken breasts. Remove from the oven and eat. Enjoy! 😊

How to cut broccoli into florets 

I am going to be posting videos on how to cut or slice certain vegetables for those of you who don’t know how or not entirely comfortable working with a knife. I know that I have mentioned this several times in some of my articles I have a complete understanding of what it’s like to be fearful of using knives as I used to be scared of them myself. But I am not as fearful anymore.

My hope and prayer is that these videos will encourage you to conquer the fear of using a knife.

To begin I am teaching you my way of cutting broccoli into florets.

 

CREAMY BROCCOLI CHEESE SOUP

I love Panera Bread’s soups. Here are some of my favorites: loaded baked potato, tomato basil, and creamy broccoli cheese. And oh let’s not forget about the bread bowls lol. Yum yum! 😀 Lol, so anyway I want to share with you a creamy broccoli cheese soup recipe and no it’s not Panera Bread’s copycat version, but it is similar. One of these days I will share the copycat one with you too. 🙂 This creamy, cheesy, warm and cozy broccoli cheese soup is excellent for a chilly, rainy day. This soup will warm you up from the inside out.

CREAMY BROCCOLI CHEESE SOUP

Directions

5 Tbsp salted butter
1 C. white onion diced (about ½ a large onion)
2 cloves garlic, finely minced
¼ tsp dried thyme
⅓ C. flour
2 C. chicken broth
¼ tsp. nutmeg
2 bay leaves
2½ C. milk
¾ C. half and half
3½ C. chopped, fresh broccoli pieces
2 carrots, peeled, grated
2 C. freshly shredded cheddar cheese
3 Tbsp. Parmesan cheese shredded or grated
1/8 tsp. salt
1/2 tsp. pepper

Directions

1. Melt the butter in a medium saucepan over medium heat. Combine the onion and sauté for seven minutes or until the onion starts to turn translucent. Then add the garlic and thyme and continue to cook for one minute.

2. Mix in the flour and continue to cook for another minute, stirring constantly. Whisk in the broth, nutmeg, bay leaves, milk, and the half and half. Cook and frequently stirring until the mixture begins to boil, approximately six-nine minutes.

3. Add the broccoli pieces along with the grated carrots. Allow the broccoli to get slightly tender, about six-eight minutes. Turn the heat off, remove the pot from the stove, add in the cheddar and parmesan cheese. Season with salt and pepper to taste. Serve warm with crusty French bread.

Broccoli can taste delicious

Hello cooks,

So I am going to be telling you as I promised how to make broccoli taste yummy. For me, this side dish is very addicting. Why you might ask???
Because it is full of zest and my all time favorite – parmesan cheese. Lol, I have an obsession with it. And of course, yes, the dish does involve working with an oven which in a way is excellent cause it will help you feel more confident dealing with it. If you use the appliance often, you someday will overcome your fear of using it.

Here’s the fabulous recipe:

Roasted Lemon Broccoli Parmesan

Ingredients

24oz broccoli florets
3 Tbsps of olive oil
Two cloves garlic, minced
1/2 C grated parmesan, divided
Juice of 1 small lemon
Two lemons, cut into wedges (Small)

Instructions

Preheat oven to 425F Line a baking dish with foil and spray it with non-stick cooking spray and set aside.

In a large bowl, stir broccoli, olive oil, salt and pepper, garlic, lemon juice, and half of the parmesan. Mix all of the flavors until well blended. Arrange broccoli in a single layer on the dish and place lemon wedges around as you see fit. Bake for twelve-fourteen minutes, or until soft. Take it out of the oven and sprinkle the remaining of the parmesan. Squeeze lemon wedges over broccoli if desired. Enjoy!

Now I completely understand you still might be a little nervous using the oven but remember what I shared with you in my last post that God will assist you in giving you boldness whenever you become afraid of doing something. 🙂
