Baked Garlic Cheddar Chicken

I had a bit of a challenging time with this recipe. How was it difficult you might ask??? Well because I wasn’t paying attention and didn’t read the instructions thoroughly like I regularly do and ran into a few roadblocks. However, on the sunny side, everything turned out perfectly fine lol. 🙂

This cheddar chicken is so tasty that when you bite into one, you’ll send your taste buds into a frenzy.

Baked Garlic Cheddar Chicken

Ingredients

1⁄2 C. butter
4 garlic cloves, minced
3⁄4 C. Progresso dry bread crumbs, plus more for the baking dish (Italian seasoned)
1⁄2 C. parmesan cheese, freshly grated
1 1⁄2 C. cheddar cheese, shredded
1⁄4 tsp. dried parsley
1⁄4 tsp. dried oregano
1⁄4 tsp. ground black pepper
1⁄8 tsp. salt
8 boneless, skinless chicken breast

Directions

Preheat oven to 350 degrees F.

1. Grease a 13 x 9-inch baking sheet and line it with foil.
And cover the bottom with a thin layer of bread crumbs.
Over low heat melt the butter in a small saucepan and cook garlic until tender, about 5 minutes. Remove from heat and pour the garlic butter into a shallow dish. Set aside. 

2. Rinse and pat dry chicken. Next place chicken on a clean surface and pound it until they are 1/4-inch thick. You can use either a meat mallet or a rolling pin. In another shallow dish, combine together bread crumbs, parmesan cheese, cheddar cheese, parsley, oregano, pepper, and salt. Soak each chicken breast in garlic butter to coat, then press into the breadcrumb mixture.

3. Place coated chicken breasts in a prepared baking dish. Drizzle with any remaining butter and sprinkle with any remaining bread crumb mixture. Bake for thirty minutes or until chicken is no longer pink and juices run clear.

Crockpot Frito Pie

I’m happy to be sharing with you a recipe I prepared today, that’s not on Pinterest (well besides the salmon cake sandwiches), but other than that, all of the 51 recipes I have made came from Pinterest. Lol, as you can tell, I’m addicted to the social media site. You are probably thinking geez girl, have you ever thought of picking up a thing called a cookbook and or why do you oppose to using one?

To clarify your thoughts yes, of course, I actually have convinced myself to use one haha, 😀 and no I don’t have anything against using cookbooks it’s just that since I’m social media geek, I’ve realized I have a huge habit of depending on Pinterest for my cooking inspiration lol. However, for those of you who often prefer working with cookbooks instead of social media, I support you 100% all the way. 🙂 🙂

Furthermore, like I said earlier, I decided to do something a little different in using an actual cookbook instead of my regular go-to spot.
I found this Crockpot Frito Pie recipe in an all crockpot recipe cookbook (in which of course, I certainly will be using more frequently) that was given to me last Christmas from my Aunt.

Now onto finally talking about today’s recipe; Whenever I think about Frito Pie, my mouth begins to go crazy for it. And evidently here’s why: it’s somewhat messy, fun to eat, Crunchy, Salty chips smothered in all sorts of tasty additions… there’s just no WAY to go wrong with this family-friendly favorite.

Crockpot Frito Pie

Ingredients

1 lb ground turkey or beef

1/2 sweet onion

1 can stewed tomatoes

1 package of chili seasoning

Fritos

Optional:

Sour Cream

Shredded cheese

Black olives

Directions:

1. Chop an onion using either a knife and or a food processor. Next, pour a few drops of olive oil into a large skillet along with the onion and meat. Cook over medium-high heat. And cook until it’s no longer pink. Drain grease.

2. Throw in meat and onion mixture into a 4-qt slow cooker. Next, combine the stewed tomatoes, pork and beans, and the chili seasoning. Stir well. Cover and cook on LOW for 4-6 hours.

3. After finished cooking, place Fritos in the bottom of a bowl, cover with chili and add toppings. Yummoelicious! 😀

Cooking tip: If you have sensitive eyes and always end up crying cutting up an onion I recommend wearing goggles lol. You will look funny but trust me it helps. 🙂

Sweet chops with a kick

So, I want to show you how to make some bad boy pork chops lol. And let me tell you that these chops had a real kick to them with brown sugar, which turns into a nice sweet glaze. If you’re a wimp like me lol and do not like spicy food, please don’t worry because these chops are NOT extremely spicy-hot. Haha! 😀 But they do contain tons of flavor. In fact, they are stuffed with so much taste that when you bite into one, you’ll send your taste buds into a craze.

 

Glazed Pork Chops

INGREDIENTS

¼ C. brown sugar
½ tsp cayenne pepper
½ tsp garlic powder
1/2 tsp onion powder (optional)
½ tsp paprika
½ tsp salt
¼ tsp black pepper 
2 Tbsp olive oil
Four thick or thin cut boneless pork chops

INSTRUCTIONS

Preheat the oven to 350ºF.

1. In a small bowl, combine the brown sugar, cayenne pepper, garlic powder, paprika, salt, and black pepper. Remove the pork chops from their package. Rinse individual chop with water and pat them dry. Next, massage the sugar-spice mixture over all sides of each chop. The moisture from the meat may dissolve the sugar and create a thick paste with the spices.

 

2. Heat 2 Tbsp olive oil in a large, oven-safe skillet over medium heat. When the oil begins to shimmer, add the pork chops. Cook the chops for about 5 minutes on each side, or until nicely browned. Transfer the skillet to the preheated oven and cook for another 5-10 minutes to finish cooking.

3. Test the chops with a meat thermometer to make sure the internal temperature has reached 165ºF. Cook longer if needed. Dredge the chops through the thick sauce in the bottom of the pan just before serving.

Cooking Notes: If you use thin cut chops like I did, reduce your cooking time and you will not need to place them in the oven.

Flavorful chicken tenders

I’m going to be showing a chicken tender recipe that is so crispy and packed with flavor that when you bite into one, you’ll send your taste buds into a frenzy. They are messy but very easy to prepare and quickly baked in your oven; these Parmesan Ranch Chicken Tenders are sure to become a new family favorite!

Believe me on this one: everyone will LOVE this dinner!

Parmesan Ranch Chicken Tenders

Ingredients

½ C. grated Parmesan cheese
1 ½ C. crushed corn flakes
One packet of ranch salad dressing mix
2 lbs. boneless, skinless chicken tenders, patted dry
½ C. (1 stick) butter, melted

INSTRUCTIONS

Preheat oven to 350 degrees F.

1. While the oven is heating up, prepare the chicken tenders by getting a sheet of wax paper and put it on your kitchen counter. Rinse each breast with water then place them on the wax paper. Pat them dry until they are no longer wet and set aside. Line a baking sheet with foil and spray with cooking spray. Set aside.

 

2. Stir cheese, corn flakes, and dressing mix in a shallow bowl.
Place melted butter in a separate shallow dish.

 

3. Dip dry chicken in butter and then dredge in cornflake mixture. Place tenders on prepared baking sheet. Top with remaining crumbs and drizzle with any remaining butter.

 

4. Bake for about 20 minutes, or until chicken the is finished cooking, and the coating is brown and crispy.
