Homemade Condensed Cheddar Cheese Soup

Are you allergic to gluten or just simply trying to eat healthier by cutting out gluten entirely? But you still would like to enjoy the same delicious foods without feeling uncomfortable or ruining your diet. Well then don’t I have the perfect solution to your dilemma.

I recommend that you add this condensed cheddar cheese soup to any recipe that calls for the soup rather than using the ones that you find at your local grocery store. I recommend you adding this soup to Slow Cooker Beefy Nacho Soup.

Condensed Cheddar Cheese Soup Substitute

Ingredients

3 Tbsp butter

3 Tbsp flour

1 C milk

1 1/2 C cheese, freshly shredded

Directions

1. Melt the butter over medium-low heat in a medium saucepan. Combine the flour and whisk together until smooth. Slowly add the milk and continue whisking while bringing mixture to a gentle boil.

3. Once it thickens slightly, add cheese and stir until melted. Let the mixture cool down thoroughly. Pour it into an airtight container and it in the fridge.

Something smells delicious

This past weekend I made this tasty recipe called Pesto Parmesan Pork Chops.

Wow! Let me tell you that it was almost like my nose was trying to eat the smell of the pork chops because after placing

these chops into my oven to let them bake the aroma from the pesto and the chops instantly made my kitchen smell so good!

Here’s a little surprise for y’all! You ONLY need three ingredients for these flavorful Pesto Parmesan Pork Chops.What more could you ask for?

I recommend this Sautéed Mushrooms & Galore for the side dish.

Pesto Parmesan Pork Chops

Ingredients

6-8 pork chops of your choice, I used boneless

8 Tbsp pesto sauce

1 C shredded Parmesan cheese

Salt and Pepper

Directions

Preheat oven to 350 degrees. Grease a 9×13 baking dish with cooking spray.

1. Shake salt and pepper on the bottom of a large cookie sheet (the kind that has a lip around the edge so juices won’t spill off.) Place pork chops down an inch or two apart. Lightly season each pork chop with salt and pepper.

2. Spread one tablespoon of pesto sauce on each pork chop. I like to put the spoonful on each pork chop before I start spreading so I don’t risk putting a contaminated spoon back in the pesto jar since I will have pesto leftover.

3. Once Pesto is spread evenly on the top of each pork chop sprinkle them generously with the shredded Parmesan cheese.

4. Place the seasoned pork chops in the oven and bake at 350 degrees for forty five-sixty minutes. Depending on how thick the pork chops are they may need the whole sixty minutes.

Birthday celebration and Buffalo Chicken

I had a real nice and relaxing birthday celebration with my family. We didn’t do anything except for eating. We consumed Chick-fil-A and Torchy’s Tacos and for dessert cupcakes

I am going to be sharing with you Crockpot Buffalo Chicken Wings as I promised. I too had intended to make cucumber salad but I unfortunately didn’t have any cucumbers. Yes, I realized that I could have made a trip to the grocery store but I didn’t feel like it. Do you feel that way too sometimes?

So I decided to make the salad next week instead.

I want say Thank You so very much for your patience with me and the fact that I have not been blogging as much as I usually do.

Anyway, I made a few changes to this crockpot recipe. The first thing I did was to use thighs that I had stored in freezer because I didn’t have any wings. Then I made a change to the liquid. My choice was to use vegetable broth instead of beer because I didn’t have any in my pantry.

Since I made a change to the liquid I actually became nervous about how this recipe was going to turn out. But to my surprise the taste of the chicken went above and beyond my expectations. It was incredibly moist and juicy. Not to mention that it wasn’t to overwhelming spicy.

Crockpot Buffalo Chicken Wings

Ingredients

12-14 whole chicken wings or thighs1¼ c Frank’s Hot Sauce (or favorite hot sauce), divided

1¼ c butter, divided

1 C Chicken or vegetable broth

Directions

1. Cut chicken in half. Place chicken in crock pot. In a medium saucepan melt one cup of butter and add one cup of hot sauce and stir until completely combined. Stir one cup of broth into sauce. Pour the sauce over the chicken. Cover and cook on LOW for six-seven hours or HIGH for three-four hours.

2. Turn on your broiler. Melt ¼ cup butter into ¼ cup hot sauce and stir until well combined. Spread wings out evenly on a broiler pan and coat generously with sauce

3. Place wings in broiler for four-five minutes, checking constantly so they don’t burn.

A Simple Recipe Packed With Flavor

This brown sugar pork chop recipe is excellent for those of you who don't prefer to cook recipes that require ten or more ingredients. They too are full of delicious flavors. Depending on how long you cook your pork chops in the oven the brown sugar will caramelize and even form a crispy crust if you broil them in your oven for two-four minutes.

Brown Sugar Pork Chops

Ingredients

1/3 C brown sugar
2 tsp salt
1 1/2 tsp black pepper
4 boneless or bone-in pork chops

Directions

Preheat oven to 350F. Lay a sheet of foil or parchment paper onto a baking dish and grease it with cooking spray.

1. Combine in a small mixing bowl the brown sugar, salt, and pepper.
Rub the brown sugar mixture on all sides of each pork chop. Place your pork chops on the foil or parchment lined baking sheet. Bake them for thirty-five minutes to an hour or until internal temperature reaches at least 150 degrees.

I have been slacking a little on doing my weekly reviews. I wanted to bring you up to date on what I have been cooking within the past few weeks.

Not all recipes are overwhelming 

This summer, it will be two years since I officially started cooking. I think I should celebrate because I have had to overcome a lot of fears/trials to get this far in cooking. I think it’s extremely awesome because I now want to teach others who are dealing with the same challenges that I had to conquer how to cook.

With only 4 ingredients, yes you have read that right, this broccoli cheese chicken bake has just four ingredients. Isn’t that awesome? This recipe brings all the delicious flavor of comfort food into a dinner that is almost too simple to make on a busy weeknight!

Broccoli Cheese Chicken Bake Recipe

Ingredients

3-4 Boneless Skinless Chicken Breasts                                                                                                       1 Campbell’s Oven Sauce: Cheesy Broccoli Chicken                                                                                                 4 Cups Frozen Broccoli Florets                                                                                                                         6 oz. Cheddar Cheese, shredded

Directions

Preheat the oven at 400F Line a 9X13 baking dish with foil and lightly grease it with cooking spray. Set aside

1. Place the chicken breasts flat on the bottom of the baking dish. Pour the frozen broccoli florets onto the chicken breasts. Spread the package of the Campbell’s Oven Sauce evenly over the top of the broccoli. Sprinkle the cheddar cheese over the top of the sauce.

2. Place the baking dish on the middle rack in your preheated oven for forty-five – sixty minutes or until the chicken is cooked through. Depending on your oven, altitude and thickness of the chicken breasts this could be more or less time.

3. Check the chicken throughout to make sure that the top is not too brown, if you don’t want it to get any more browned, then place a piece of foil loosely over the top for the remainder of the cooking time. Serve over rice, pasta, or greens and enjoy!

Parmesan Ranch Broccoli

5-MINUTE PARMESAN RANCH BROCCOLI

INGREDIENTS

6-7 C broccoli (about 1 1/2 lbs, stalks removed)
1 1/2 tsp dry Ranch dressing mix
2 Tbsp butter
2 Tbsp grated Parmesan

Directions

1. Heat a large skillet over medium-high heat. Melt butter in the skillet, then combine broccoli. Stir to coat and cook for approximately four minutes, until broccoli starts to soften but still has a crisp bite to it.

2. Sprinkle Ranch mix over broccoli. Add about two-three tablespoons of water and stir to coat broccoli completely. Cook for about a minute. If you prefer broccoli to be very soft, cook a couple of minutes longer. Sprinkle Parmesan cheese over broccoli and serve hot.

Baked Lemon Pepper Chicken

Ingredients

4 chicken breasts
1/2 c. extra virgin olive oil
1/4 c. lemon juice
1 Tbsp. lemon pepper
Grated parmesan cheese

Instructions

Preheat your oven to 350 degrees. Lightly grease a baking dish with non-stick cooking spray.

To prepare right away: In a medium bowl combine the oil, lemon juice, and lemon pepper. Place the chicken onto the greased baking sheet and pour the marinade all over the chicken. Sprinkle with grated parmesan, then bake for forty-five minutes

OR TO FREEZE… Combine in a gallon freezer bag: chicken, oil, lemon juice, and lemon pepper. Seal tightly. Place the bag/container with everything inside into your freezer. Then to prepare, thaw overnight in the fridge, then top with parmesan, and bake in the oven for forty-five minutes at 350F.

Root Beer Pulled Pork

I hardly ever drink soda. I am serious about it too! The only time I have myself a thing of soda is during special occasions. Whenever I want some soda pop I go for my all-time favorite Root Beer, it’s so yummy! Ohh, you know what I love? Root Beer Floats. Those things are scrumptious! One of these days I will teach you how to make a fancy Root Beer float. Yum, yum!

 Okay, back today’s recipe!

When I noticed that root beer was the in the title of the recipe, I, of course, became excited. So I grabbed a can of root beer and my trusty crockpot to cook a pork shoulder for this juicy Root Beer Pulled Pork. The thought of cooking it in root beer probably sounds a little goofy, but it acts as a tenderizer, and it too adds a unique flavor. You totally have to give this one a try. I promise you won’t regret it!

Crockpot Root Beer Pulled Pork

Ingredients

3 lbs of pork butt or shoulder
1 can of A&W Root Beer
1 18oz bottle Sweet Baby Ray’s BBQ sauce or your favorite

Directions

1. Place the pork in your crockpot and pour the can of root beer on top. Cover and cook on LOW for six-eight hours. You should be able to shred the meat easily with a fork when it’s finished cooking. After four-five hours check to see if your meat is browning to your taste and is tender enough to pull. You may need a little more or less than six hours depending on your crockpot and the cut of meat.

2. After the pork is finished cooking, drain the root beer and shred the pork with two forks on a large plate or chopping block. Place the shredded pork back into your slow cooker and add about eight teen ounces of your favorite BBQ sauce and stir to mix. Let warm for approximately fifteen minutes before serving. Serve by itself or on toasted hamburger buns or sandwich rolls. Add cheese and or coleslaw if you prefer.

Court’s Cooking notes:

To give the pork more flavor, in a small bowl combine one teaspoon salt, one teaspoon pepper, one teaspoon garlic powder and stir until mixed well. Then get a small handful of the mixture and rub it all over the meat, place it in an airtight container. Then pour  1/3 cup of Bragg’s all over the pork and seal the container tight. Place it in the fridge and leave it overnight. Also, you can cook this pork with a can of Dr. Pepper, Pepsi or Coke. But Root Beer is my favorite.

A Four-Ingredient Crockpot Dinner

 

Oh man, you know what I have been craving for a real long time? Some delicious Chinese food. It’s one of my most favorite cuisines.

But then you think ugh I don’t want to spend the money on takeout or waste all of my time to prepare it? How about you give this spectacular, insanely delicious and crazy easy Crockpot Orange Chicken dinner a try.

This simple Chicken Recipe delivers all of that… BIG Time!!! Oh, how I LOVE Orange Chicken! Skip the takeout and make some at home…with ONLY four yes, just 4 ingredients!

Crockpot Orange Chicken Recipe

Ingredients

4 Boneless Skinless Chicken Breasts, thawed
¾ C Smuckers Sweet Orange Marmalade
¾ C of Sweet Baby Ray’s Original BBQ Sauce {it’s delicious!}
2 Tbsp. Bragg 

Instructions

1. Lightly grease your crockpot with non-stick cooking spray. Place the chicken into the crockpot and cook on HIGH for three hours or on LOW for six hours (Covered). After three hours on HIGH or six hours on LOW, empty the juices from crockpot At this point… you can either leave the chicken breasts complete, or remove, cut into cubes, and transfer back to crockpot.

2. In a large bowl combine bbq sauce, orange marmalade, and soy sauce. Pour mixture over chicken, and cook on low or high for thirty more minutes {covered} Yummoelicious!
