Southern Weather Inspired Soup

I love eating soups. But when the fall and winter seasons roll around in Texas, it sometimes can be challenging to enjoy a nice warm and tasty soup because it’s usually hot and humid here. Actually to tell you the truth you never know what to expect from the Texas weather.

Anyway back to the recipe.

We were delighted to have our first cold front arrived yesterday. It was excellent! I was so thrilled that it inspired me to cook some soup. I prepared this incredibly simple and savory recipe for Zucchini Sausage Soup. It has excellent fresh flavors and fulfills that comfort food craving all at once.

 

Zucchini Sausage Soup

Ingredients

1 16-oz roll pork sausage

1/2 C diced onion

2 carrots, sliced

2 stalks celery, sliced

2 cups diced zucchini

1 14.5 oz can diced tomatoes

2 C beef broth

1/2 tsp ground sage

1/2 tsp thyme

Parmesan cheese, for topping

Directions

 

1. Cook the sausage & onions in a large skillet over medium heat. Stir to crumble sausage. Drain if necessary.

2. Add in remaining ingredients and stir to combine. Cover and simmer for forty five minutes, until vegetables are soft. Serve topped with shredded Parmesan cheese.

Court’s Cooking Notes: If you’re in a rush, you can microwave the carrots and celery in a small covered bowl with 1/4 cup water for four minutes. Add the zucchini and microwave another two minutes. Then add everything to the soup. You can increase the heat to medium low and cook for approximately ten-fifteen minutes and it will be done.

Green Roasted Veggie With Garlic

 

Roasted Zucchini and Garlic

1 lb zucchini, each cut in half across the middle, then each half quartered lengthwise
1 teaspoon fresh minced garlic cloves
1 Tbsp olive oil
1/2 tsp salt and pepper
1/2 tsp dried thyme

Directions

Preheat your oven to 450°F. Line a 9X13 baking dish with foil. Set aside.

1. Spread the zucchini out onto the previously prepared baking dish. Next, combine in a small bowl the garlic, olive oil, salt, black pepper and dried thyme. Stir well. Pour the garlic mixture onto the zucchini and stir to coat.

2. Roast zucchini in your preheated oven until it starts to brown, Roast the zucchini for 8-15 minutes, or until it begins to brown. (Start checking at about 7 minutes and keep checking every few minutes.)

Crispy Parmesan Garlic Chicken with Zucchini

Tonight for my family I cooked this Crispy Parmesan Garlic Chicken with Zucchini. I, of course, found the recipe  on Pinterest. I love getting recipes from there, lol it’s addicting! Oh, by the way, they, of course, enjoyed their meal. 🙂 It’s relatively an easy one pan dish that you can prepare, and your family will enjoy! The chicken is so tender and breaded with an amazing parmesan garlic crust, and the zucchini is sautéed in a savory buttery parmesan garlic!

Crispy Parmesan Garlic Chicken with Zucchini

Ingredients

2 Chicken Breasts, sliced in half, or 4 thin chicken breasts
8 Tbsp butter, divided
½ C. Italian Bread Crumbs (I used Panko)
½ C. plus 1 Tbsp grated Parmesan, divided
¼ C flour
2 medium zucchini, sliced
2 garlic cloves, minced

Instructions

1. In a large skillet over medium heat melt two tablespoons of butter.
To cook the chicken: melt the remaining four tablespoons of butter in a microwave-safe shallow dish. In another shallow dish mix bread crumbs, parmesan cheese, and flour. Dredge the chicken in the butter and then coat with the breadcrumb mixture and place in skillet.

2. Cook on each side for about three – four minutes until the outside is crispy and the chicken is fully cooked. Set aside on a plate. Add another two tablespoons of butter back to the skillet and saute the minced garlic for a minute. Place the zucchini into the skillet and saute until tender. Salt and pepper to taste and add one tablespoon of parmesan. Put the chicken back to the skillet and heat for a minute or so. Serve immediately.
